My favorite new coffee shop in Knoxville

Guys! I am an enthusiastic person (if you haven’t already gathered that), and my enthusiasm for coffee knows no limits! I get a renewed love for coffee whenever I find a new coffee shop, and that is definitely the case for me right now.

I met Katie from Pearls and Twirls to talk about working together on some content for her blog, and she suggested we meet at Capybara, the new coffee shop in the University Commons center in Knoxville. I love the location because it’s super convenient to campus and perfect for when I am popping into My Kind of Lovely or need to go grocery shopping.

I quickly fell in love with Capybara because of the atmosphere and authentic coffee experience! I first got the iced chai without espresso, and it was soooo yummy! I have since fallen in love with splitting a chemex with whoever I come with, but I get the plain iced coffee when I am alone. You really can’t go wrong with any of their drinks, and the cookies are to die for! They are about to start having a new fall drink, and I am already looking forward to coming in for one of those and a pumpkin spice cookie!

There are lots of good tables for studying or conversation and outlets for a good computer charge! They play really good coffeeshop music, which is a plus in case you forget headphones. They are also open from 7-7 every day, which is great for me.

I really enjoy grabbing a cup of coffee, and I hope you think about stopping by Capybara if you’re near campus!

🍋 lemonade recipe to enjoy all summer long: I 🍋 lemonade recipe to enjoy all summer long: 

Ingredients:
- 1 cup freshly squeezed lemon juice (about 4–6 lemons), or more if you like it super tart! 
- ¾ cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice
- Lemon slices, for garnish (optional)

Instructions:
In a small saucepan, combine 1 cup of water and the sugar. Heat over medium, stirring until sugar is completely dissolved to make a simple syrup. My grandma just put the sugar directly into the lemonade which was so delish! But I played around with doing this and think it incorporates really well. 

Let cool, then mix with lemon juice and remaining 3 cups of cold water. Optional! The tiniest dash of vanilla extract and very thinly sliced lemons. 

Taste and adjust sugar or water if needed. 

Serve over ice and garnish with lemon slices.
Oh my gosh! This was the best roast chicken I’ve Oh my gosh! This was the best roast chicken I’ve ever made, all thanks to @wishbonekitchen’s boyfriend roast chicken recipe! Im now convinced all roast chickens should be dry brined for 24 hours 👏 

I also made her brown butter broccolini from the same cookbook. Delish!
