Meals Lately No. 2

I love rounding up the meals I had been coking last month, and I thought it would be fun to update you all once again. I have really been in my groove when it comes to cooking lately- one of the many joys working from home has afforded me. I was just telling Preston that I can tell how much I have grown as a cook because I made a meal I hadn’t cooked since one of the first quarantine weekends and found it so much easier than that first time! I feel I am also getting better at learning to wing it and dress up even basic meals with a little food styling and garnishes- so fun! I think putting even a tiny bit of effort into meals is definitely one of Preston’s love languages because he seriously gets so happy when I jazz up something 🙂

Here’s what healthy-ish meals I have been cooking lately-

White Chicken Chili

Turkey Taco Lettuce Wraps

Sweet Potato, Quinoa, Kale Salad

Orzo Stuffed Peppers

Guiness Shepherd’s Pie (this totally isn’t healthy, but who cares!! It’s such a treat) * I accidentally didn’t have any potatoes when I made this so I used sweet potatoes and it was super good, probably made it a little healthier.

Corn Chowder

“Light” Enchiladas 

* Disclaimer, I think the name “Eat Yourself Skinny” is so odd- I have no idea why someone would still be using that blog name in 2020. Eat however you want to eat- being skinny isn’t the same as being healthy. I don’t want anyone to think I am promoting doing anything to be “skinny” just because I am sharing recipes from this website. Just my two cents!

🍋 lemonade recipe to enjoy all summer long: I 🍋 lemonade recipe to enjoy all summer long: 

Ingredients:
- 1 cup freshly squeezed lemon juice (about 4–6 lemons), or more if you like it super tart! 
- Âľ cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice
- Lemon slices, for garnish (optional)

Instructions:
In a small saucepan, combine 1 cup of water and the sugar. Heat over medium, stirring until sugar is completely dissolved to make a simple syrup. My grandma just put the sugar directly into the lemonade which was so delish! But I played around with doing this and think it incorporates really well. 

Let cool, then mix with lemon juice and remaining 3 cups of cold water. Optional! The tiniest dash of vanilla extract and very thinly sliced lemons. 

Taste and adjust sugar or water if needed. 

Serve over ice and garnish with lemon slices.
Oh my gosh! This was the best roast chicken I’ve Oh my gosh! This was the best roast chicken I’ve ever made, all thanks to @wishbonekitchen’s boyfriend roast chicken recipe! Im now convinced all roast chickens should be dry brined for 24 hours 👏 

I also made her brown butter broccolini from the same cookbook. Delish!
