I have gotten noticeably more interested in breakfast over the past few weeks, and I honestly find myself surprised each day when I feel like having even a semi-time intensive morning meal. I have historically never had anything to do with cooking in the morning, my limit is usually a breakfast bar or banana- toast even felt like too much work for me.

Since changing my morning routine around, I have been much more interested in making breakfast- nothing feels too intimidating in the morning now! I know this will definitely be limited to WFH time, but I am enjoying it while it lasts. I wanted to round up a few breakfast inspiration recipes and what I have had for breakfast recently! I don’t really go by a recipe for any of my breakfast selections, but I tried to find the closest recipe possible.

Blackberry scones- My neighbor made these one Saturday morning when she had us over for breakfast and they were SO good. I could have kept eating them! Half Baked Harvest actually has some really good looking scone recipes!

Breakfast burritos- This recipe looks a lot more complicated than the ones I make! Just omit anything you dont have on hand.

Oatmeal with *all* the toppings- For this, I just make Bob’s Red Mill quick cooking oats, put in some crunchy peanut butter, honey, coconut flakes, any fruit we have on hand (usually banana), chia seeds- honestly anything goes!

Avocado Toast- Toast some bread (the thicker cut the better in my opinion!), put your avocado on the toast, smash it with a fork, crack pepper + salt and Trader Joe’s Everything but the bagel season, squirt of lemon, maybe some feta cheese? Add an egg? Bacon bits? Again, anything goes. *Chef’s Kiss*

French omelette- Okay, I have to come clean, Preston usually makes us this! But it is seriously so creamy and light at the same time- highly recommend trying!

Scrambled eggs- does anything beat a class scrambled egg or scrambled egg sandwich? It’s just so good. I always whisk my eggs with milk, salt and pepper. I usually like to top them with green onion and feta cheese if I have it on hand!

Of course, all of these meals are accompanied by black coffee- I seriously don’t think these meals would taste the same without it.

I hope these very casual breakfast recipes inspire you to step up on breakfast even a little bit! It has been a game changer in my morning routine. I normally share casual photos of these on my Instagram stories, so make sure you’re following me there!
