Five Easy Summer Desserts to Make Right Now

Almost nothing says summer quite like sweet, refreshing and delicious desserts. I have a handful of easy summer recipes I keep on repeat. It just seems like it’s easiest to stick to what you know in the summer, so I am excited to share these if you’re looking for some new summer recipes to add into your rotation.

Easy Summer Desserts

S’mores Cookies

If you are looking for the easiest, crowd pleaser dessert, I promise you it is these s’mores cookies. A summer twist on a classic favorite, these are incredibly delicious and actually really easy to make. If you really like fudgy, indulgent chocolate chip cookies, you will love these.

It is rare that I don’t have a container of this prepared in my freezer ready to bake on a moment’s notice. I also like putting the dough in a small skillet to make a skillet cookie for a special occasion.

I like that these cookies have really normal ingredients. I usually just try to buy graham crackers and the marshmallows, and then I have those on hand whenever I need to make these again.

Sprinkle some flaky sea salt on top of these if you like a salty touch to your sweets like I do.

Lemon Pie with Graham Cracker Crust

Perhaps nothing says summer better than a light and refreshing lemon pie. This one is so unbelievably good, and chilling it in the fridge really makes all the difference. Your friends and family will likely request this one over and over again.

If you have the time, try not to skip on the homemade graham cracker crust and whipped cream, it really makes all the difference here.

This pie also just presents so well. I always slice some lemons really well and drape them on top like the picture. It’s one of those desserts that looks a lot more impressive than the amount of effort it took!

S’mores Skillet Cookie

I couldn’t help but include another s’mores recipe. You really just can’t go wrong with a s’more or s’mores dessert in the summer. Gooey is the perfect way to describe this skillet cookie, and the ice cream on top just polishes everything off in the best way.

Peanut Butter Brownies

These peanut butter brownies feel so nostalgic somehow, and they are just outrageously delicious and rich. One of these brownies is truly such a treat. It almost veers on the side of a cake, but it still has that rich brownie taste we all love.

These take a little bit more time with waiting for the layers to freeze, but they are still pretty easy.

Coconut Banana Cake with Chocolate Frosting

Something about banana bread screams summer desserts to me. I love the combination of banana, coconut and chocolate in this recipe, and it feels really light but still like a treat.

If you aren’t looking for another chocolate recipe, I think adding caramel sauce to the top of this would be really amazing too.

🍋 lemonade recipe to enjoy all summer long: I 🍋 lemonade recipe to enjoy all summer long: 

Ingredients:
- 1 cup freshly squeezed lemon juice (about 4–6 lemons), or more if you like it super tart! 
- ¾ cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice
- Lemon slices, for garnish (optional)

Instructions:
In a small saucepan, combine 1 cup of water and the sugar. Heat over medium, stirring until sugar is completely dissolved to make a simple syrup. My grandma just put the sugar directly into the lemonade which was so delish! But I played around with doing this and think it incorporates really well. 

Let cool, then mix with lemon juice and remaining 3 cups of cold water. Optional! The tiniest dash of vanilla extract and very thinly sliced lemons. 

Taste and adjust sugar or water if needed. 

Serve over ice and garnish with lemon slices.
