Meals Lately No. 3

I’m here for another round of recent meals! I hope you all love these posts as much as I do. Plus, keep your eyes out for a super special recipe related post coming very soon.

It’s been so long since I did one of these posts, so I am sure I missed multiple dishes! If you have a question about any of these meals, please reach out to me on Instagram, and I would be happy to help!

Defined Dish Enchiladas- These were good, but not great! They didn’t taste particularly healthy though, so I guess that’s a plus! It was also so easy, one of those dishes that’s so easy you think you’re doing it wrong ya know?

Saucy Ginger Sesame Noodles- Oh my word- AMAZING!! But, I will warn you- If you don’t like pad Thai, you probably wouldn’t like this. It also was pretty messy and a little time consuming. Usually HBH’s 30-minute meals end up taking me way longer because of the homemade sauces it usually involves.

Zuppa Toscano soup- This was very good and something I had never really made or had before! Highly recommend.

Slow Cooker Creamy Tortellini Vegetable Soup- Wow, this was yummy. We had a ton of leftovers, and actually it did stink because I had to pick all the tortellinis out from the broth so the tortellinis wouldn’t soak up the broth! Just a warning.

Balsamic Mushroom Chicken Thighs- These are very good, and I am actually really looking forward to making more from this site. I am all about staying on budget!

Brown Butter Apple Blondies- Okay, I know this isn’t a meal, but I couldn’t leave it off! These were SO good.

Sheet Pan Sticky Chicken and Brussel Sprouts- Yummy, yummy! This was another delicious meal, and I really liked the way the Brussel sprouts turned out.

Turkey Taco Lettuce Wraps- One of my go-tos! I made this as a meal prep meal for the first time, and it turned out to be perfect for that. I don’t always end up putting this in lettuce wraps, sometimes I just make it a salad or we eat it plain as a bowl! It’s also good with tortilla chips or rice.

Pastry Wrapped Brie- This is one of my favorite easy appetizers! It’s definitely an impressive dish.

Guiness Sheperd’s Pie- I made this earlier this week for our Irish-themed book club night, and it always hits the spot.

🍋 lemonade recipe to enjoy all summer long: I 🍋 lemonade recipe to enjoy all summer long: 

Ingredients:
- 1 cup freshly squeezed lemon juice (about 4–6 lemons), or more if you like it super tart! 
- ¾ cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice
- Lemon slices, for garnish (optional)

Instructions:
In a small saucepan, combine 1 cup of water and the sugar. Heat over medium, stirring until sugar is completely dissolved to make a simple syrup. My grandma just put the sugar directly into the lemonade which was so delish! But I played around with doing this and think it incorporates really well. 

Let cool, then mix with lemon juice and remaining 3 cups of cold water. Optional! The tiniest dash of vanilla extract and very thinly sliced lemons. 

Taste and adjust sugar or water if needed. 

Serve over ice and garnish with lemon slices.
Oh my gosh! This was the best roast chicken I’ve Oh my gosh! This was the best roast chicken I’ve ever made, all thanks to @wishbonekitchen’s boyfriend roast chicken recipe! Im now convinced all roast chickens should be dry brined for 24 hours 👏 

I also made her brown butter broccolini from the same cookbook. Delish!
