I’m back for another round of “Meals Lately!” This is where I do a complete round up of (most) the meals I’ve been cooking lately. It’s been a long time since I did one— I just looked and my most recent one was in November! Time passes so quickly.
Let’s get into the meals.

Nutrition Adventure Pork Roast and Veggies
Super Simple Coconut Chicken Tikka Masala— You cannot skip the naan and white rice on this! Wow, this was my first time making this, and I can already tell it’s going to be a regular. I didn’t realize how good it was til we went to Tandur Indian Kitchen and mine tasted almost exactly the same as this!
Sheet Pan Rosemary Lemon Dijon Chicken— A classic! I’ve made this countless times.
Living Lou Crockpot Meatballs— Yum!! Seriously amazing. I already can’t wait to make these again. I made green beans with them, which ended in a little debate over on my Instagram. Preston doesn’t think green beans go with Italian food, and I totally crave them with homemade Italian.
My Crockpot Yeehaw Beer Chili— Ugh, I just love this chili, even if it is my own recipe. You should also make this 5-Ingredient beer bread if you have extra time!
Sheet Pan Bell Pepper Nachos— I made this cilantro lime crema to go with.
Hello Fresh
I can’t let this Meals Lately post go by without mentioning Hello Fresh. We first tried it around a month ago, and we had a really great experience. We’ve finished two boxes, and the second was just as good as the first. I’ve talked quite a bit about it on my Instagram story, but I want it to live on the blog too.

The basic aspects I love: The meals are super inventive, fresh, usually healthy (I just look for the healthiest options week to week), you can tailor your delivery schedule to perfectly line up with your schedule, the meals are quick and easy to make and more!
Two of our favorite meals are the salmon with creamy dijon sauce, the beef bulgogi bowls and the pork tacos with mango lime salsa.
We get the two serving box, but if we had it in the budget, I would love the get the four serving box so we could have leftovers. Anyway, I highly recommend this service, and if you have any specific questions, I would be happy to answer.
Baking
I haven’t been baking that much recently. It just seems like we’ve been craving healthier food after the sweets of the holidays.
S’more Cookies— You guys know I always have to have these in my freezer!
