My week at a glance + favorites

My goal for 2020 is to be more productive with my time than ever before. Preston (my husband) crave watching a movie or show on the couch around 9 p.m. every night, and that ends all productivity for the rest of the night. I want to be able to enjoy what we’re watching together without thinking, “I should be doing x, y or z right now.” There are some nights when this isn’t possible, but my goal is to be so productive during the rest of the day, I can quit work early.

For me, this means less Instagram breaks and more intentional work time, which I am oddly excited about. How does this relate to my week at a glance + favorites post? I have no idea, but I wanted to put it out there to hold myself accountable.

Week at a Glance 

I (kind of) started my spring internship at Discovery Inc. on Monday. I say kind of because we had orientation and I got to see my desk/workspace but didn’t actually start work. I am so excited for this to begin and to bring you guys along with me through this unique experience.

Today (Tuesday), I have my journalism class and my graduate public relations class. Preston and I eat lunch on campus during the break between the two. After my last class ends, I am going to Publix to pick up items for our dinner- I think I am making baked potatoes, vegetables and some type of meat! Then I am going to barre3 at 4:30! I also really want to make these three ingredient peanut butter cookies. I have been loving baking while I am doing homework now that I have my own kitchen!

Wednesday I have my first official work day, and I couldn’t be more excited. I have to leave my house pretty early to get there on time, but I am going to try to share my outfits each morning. I have to work a half day on Wednesdays to make it to my social media class on Wednesdays. Preston and I usually eat dinner on campus on Wednesday nights!

Thursday I have one class and then a group meeting. I will probably go to barre around 4:30 and then make something for dinner!

Friday is another day at work. I get off at 5:30, and then I am having two friends over to watch Taylor Swift’s Netflix documentary, and I am so excited!! I am making taco soup for the night.

Favorites

I bought an Origami Day planner during the second week of school because mine ended in December. I was so frantic on the first day of class (I started late because of the honeymoon) that I ran to the Vol bookstore in search of anything I could find. I was pleased to see Origami Day on the shelf, because I was already strongly considering one. With my student discount, I happily took home this simplistic, green planner designed by a UTK alum. I have really enjoyed it so far. It’s basically a blank canvas, but something about the openness makes me want to create specialized to-do lists for all different types of tasks I have, including monthly, weekly, semester long and long-term. If you’re looking for a planner and enjoy a more open layout, I strongly recommend this one. I can do a flip through of it on my Instagram story this week!

I watched the Grammy’s on Sunday (I feel like everyone watched it this year!), and I have been listening to Lana Del Rey nonstop since. I am so sad she didn’t win a Grammy for her newest album. I really recommend listening to it, but I will say the first half of the album is explicit- this doesn’t bother me (maybe because she is singing so softly and not harsh like most songs with cussing?), but the last half of the album isn’t explicit if you still want to listen.

Carly’s post about shopping your own closet was so good. I feel like I have seen posts like this 100 times, but for some reason I really related to hers. I won’t be buying any new clothes (other than using a few gift cards that I have from Christmas) all semester, and this was the motivation I needed to read.

My favorite Instagrams to follow this month have been @bresheppard (I think everyone I know follows her already honestly!) and @memoirofapreppymom! Bre gives me ~edgy~ outfit inspiration. She isn’t that edgy, but I like how she puts together really unique outfits that still feel classic and can be recreated with many items I already own. Melissa from Memoir of a Preppy Mom shares THE best deals on items. Everything she posts is something I would buy, which can be dangerous. I find myself intentionally checking their pages every day to make sure I didn’t miss anything.

Lastly, I am still obsessed with Barre3. I just finished my 100th class!! I am so proud of myself for reaching this milestone because I used to hate exercise in any form. If you haven’t tried it yet, please do!

That’s it for today’s brain dump post! I hope you all enjoyed this type of post, because it’s really nice to just put my thoughts out into the world sometimes.

🍋 lemonade recipe to enjoy all summer long: I 🍋 lemonade recipe to enjoy all summer long: 

Ingredients:
- 1 cup freshly squeezed lemon juice (about 4–6 lemons), or more if you like it super tart! 
- ¾ cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice
- Lemon slices, for garnish (optional)

Instructions:
In a small saucepan, combine 1 cup of water and the sugar. Heat over medium, stirring until sugar is completely dissolved to make a simple syrup. My grandma just put the sugar directly into the lemonade which was so delish! But I played around with doing this and think it incorporates really well. 

Let cool, then mix with lemon juice and remaining 3 cups of cold water. Optional! The tiniest dash of vanilla extract and very thinly sliced lemons. 

Taste and adjust sugar or water if needed. 

Serve over ice and garnish with lemon slices.
Oh my gosh! This was the best roast chicken I’ve Oh my gosh! This was the best roast chicken I’ve ever made, all thanks to @wishbonekitchen’s boyfriend roast chicken recipe! Im now convinced all roast chickens should be dry brined for 24 hours 👏 

I also made her brown butter broccolini from the same cookbook. Delish!
