5 Ways to Make Valentine’s Day Special This Year

If I’m being honest, Valentine’s Day has never been my *most* favorite holiday. I generally love it, but for some reason it just doesn’t hold the excitement for me that other holidays do. I think it has something to do with the lead up for it being short— it feels weird to start celebrating it in January, but then you only have two weeks to build up to it during February.

This year lends itself to an even more difficult Valentine’s Day season due to the complications brought along by COVID-19.

Although, when I was making my free February backgrounds, I did feel myself leaning more into the Valentine’s spirit and thinking of a few ways I wanted to celebrate the holiday of love during this isolated season. Six Books I Read in January 2021

I’m back for another installment of “What I read: _____!” I know I mention it every single time, but I just LOVE doing these. I’m determined to start making them more detailed because I’ve had requests for more book/reading content recently. Please let me know if you like this format or if there’s something in particular you would like me to share about each read.

In our recent “The Business of Influencing” podcast episode, we talked about what our dream brand sponsorships would be, and after writing this, I’m kicking myself for not saying a publishing house!

This is the best month I have ever had for reading, by a long shot. I’m very cyclical on habits— I get really into streaming, books, cross stitch, etc. all at once. This month was really reading, and I don’t know that I’ll ever be able to read this many books in one month again, but I hope that’s not the case!

So, if you’re looking for great books to curl up to with all winter long, make sure you see which ones I recommend and which ones I’d skip below.

Slow roasted salmon with ponzu and sesame crunch! Delish!
@thedefineddish oven baked shrimp scampi is one of @thedefineddish oven baked shrimp scampi is one of our go-to meals. easy and quick enough for a weeknight dinner but elevated enough to feel like a special meal! 

what more could you want?!
grapefruit rosemary refresher (mocktail) for 2 🍋‍🟩🌿

Ingredients: 

rosemary simple syrup 
- 1 cup sugar 
- 3-4 rosemary sprigs 

cocktail
- 1 cup grapefruit juice 
- 2 tbsp rosemary simple syrup 
- 1 tbsp lime juice 
- sparkling water 
- (optional) @jacobsensaltco rosemary salt to rim! 

Instructions: 
- heat 1 cup water and 1 cup sugar in a small saucepan over medium heat, once the sugar has dissolved, remove from heat and add rosemary sprigs, steeping for 10-30 minutes depending how flavorful you want it! 

- once simple syrup has cooled, combine grapefruit juice, simple syrup, and lime juice in a shaker over ice (or just mix it up however you want) 

- strain into rimmed glass 

- top with sparkling water to taste
