Saturday Spotlight No. 8

Hi friends!

I am so excited to be posting another Saturday Spotlight today. It has been a month since my last one, but I have been uploading so much in that span that my last one seems pretty far away. As you’re reading this, I will be in Gatlinburg for a fun weekend before my Banana Republic Event- so exciting!

Here are a few things that have been on my radar lately-

My favorite blog post: Riley Sitton, from Yes, Please blog, posted this fun, healthy recipe/activity for the holidays that I am loving. I hope to try it this week. Riley is from Chattanooga, and I love following her on Instagram.

Favorite personal post: Probably my post on trends. It was really fun to put together, and I love the photos Preston and I got at Nekter Juice Bar. (another one of my recent favorite places- right on Kingston Pike for my Knoxville people!)

Favorite music: If you have seen me lately I have probably been listening to this Christmas Jazz in the Coffeehouse playlist. It is the perfect background noise for studying or if you’re having a conversation with someone in the car.

Favorite purchase: I got this philosophy face wash for oily, sensitive skin. It has been so much better for my skin than normal stuff.

Refinery29 post:  I found this sooo interesting. It’s a money diary from a woman who makes a lot more money than normal and works in NYC.

Maggie Rogers: I randomly found Maggie on Youtube one  day (does anyone else fall down a video rabbit hole sometimes?), and I have been obsessed with her since. She was on SNL a few weeks ago, and I felt so proud of her, ha!

Regal Cinemas: I have been going to the movies like crazy lately. We are very loyal Regal Cinemas people, and I have been rotating which theatre I go to every time because there are so many things that I love about each unique location in Knoxville.

🍋 lemonade recipe to enjoy all summer long: I 🍋 lemonade recipe to enjoy all summer long: 

Ingredients:
- 1 cup freshly squeezed lemon juice (about 4–6 lemons), or more if you like it super tart! 
- ¾ cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice
- Lemon slices, for garnish (optional)

Instructions:
In a small saucepan, combine 1 cup of water and the sugar. Heat over medium, stirring until sugar is completely dissolved to make a simple syrup. My grandma just put the sugar directly into the lemonade which was so delish! But I played around with doing this and think it incorporates really well. 

Let cool, then mix with lemon juice and remaining 3 cups of cold water. Optional! The tiniest dash of vanilla extract and very thinly sliced lemons. 

Taste and adjust sugar or water if needed. 

Serve over ice and garnish with lemon slices.
Oh my gosh! This was the best roast chicken I’ve Oh my gosh! This was the best roast chicken I’ve ever made, all thanks to @wishbonekitchen’s boyfriend roast chicken recipe! Im now convinced all roast chickens should be dry brined for 24 hours 👏 

I also made her brown butter broccolini from the same cookbook. Delish!
